Not So Sushi was born in Collingwood with a simple idea — take everything you love about sushi, throw out the rulebook, and make it better. When was the last time you saw something new in the sushi world?

We’re a fusion sushi store with a bold, unapologetic approach to flavour. Our menu blends Japanese staples with unexpected twists — like our best-selling deep-fried Miso Mac roll that’s gained a cult following.

We also have our house-made cans, which are also made fresh to order and packed in our signature clear cans. Designed to grab on the go, they’re clean, flavourful, and made to match your vibe — whether you’re into strawberry matcha, iced caramel latte, peach iced tea or something a little more fun. We have you covered.
